40 Days Sans Meat: Out of Ideas

What are you giving up for Lent? Christen Nehmer, videographer for The Food Channel, is giving us her experience in going meatless. Follow along throughout the 40 days of Lent.

Day 23:

Ahh yes, Wednesday. The middle of the week. Half way done. What to eat, what to eat.

I haven’t been too adventurous with my food choices and, therefore, there’s been a bunch of repeats. However, I think this coming weekend I’ll cook up something crazy. Who knows what I’ll do? I need suggestions!

For lunch today, the Qdoba crew and I decided to redeem some more free burritos. This was my first veggie burrito. First of all, the thing weighs close to a pound, if not more. It sat on the tray and just stared up at me. I didn’t even know how to approach eating it.

I referred back to our video and thought, I could duel with a Chipotle burrito, but this is a family establishment and I don’t think they would appreciate that.

I looked over and saw Trey and Bill just kind of going for it. Aaron was using a fork and a knife. I started to just go for it and my beans fell out all over the place. I switched and went with Aaron on this one and used utensils. I got half way through and realized that I was super full. I would feel this way until about 8 p.m. Now, there’s your money’s worth.

That night, I decided to make fish tacos (the photo is not very appetizing and I apologize). I used orange roughy, which wasn’t the best choice…but when Mahi Mahi isn’t available, I guess it’s what you have to use. They were tasty, but I won’t lie, I was still full from that burrito.

Breakfast: Fresh fruit
Lunch: Qdoba Veggie Burrito
Dinner: Fish tacos (homemade)
