Day 41:

I can see the light at the end of the vegetarian tunnel and it’ just in time for grilling season, YES! Sunday is so close, I can almost taste the Easter ham.

Today for lunch, I had some salmon and sweet potatoes. Salmon is by far my favorite fish. I know I’ve said that a lot, but it has such a great flavor and tastes great grilled.

For dinner, I repeated my favorite salad. It’s been a while since I had one. It was tough giving Brent the grilled chicken. I was hungry literally an hour after the salad. I found myself snacking on Frosted Mini Wheats.

Ahh, it’s almost over.

Breakfast: Oatmeal
Lunch: Leftover salmon and sweet potatoes
Dinner: Southwest Salad from McDonald’s
