Need a gluten-free approach to Halloween? How about adding these gluten-free treats to your menu: Pumpkin Cinnamon Cheesecake, Chocolate Orange Truffles and Vegan Pumpkin Pie Ice Cream, for starters. They are just some of the recipes released by cookbook author Elana Amsterdam of Elana’s Pantry specifically for those with celiac disease or other gluten intolerance.
Amsterdam uses coconut or almond flour in place of commonly used white wheat or rice flour, putting together a number of Halloween recipes that are high in both protein and fiber. Many of them use pumpkin, in keeping with the “spirit” of the season. Recipes available include everything from pumpkin cinnamon cheesecake to pumpkin ginger soup to pumpkin bars (including the pumpkin seeds pictured).
“As someone who lives with celiac disease, I know firsthand how difficult Halloween can be,” says Elana. “Especially when we are younger, everyone is bringing candies and treats to school, and those of us with gluten-intolerances are often left behind. I want to change that.”
