Here’s a sandwich that takes everything good about caprese and combines it with everything good about grilled cheese–it’s a highbrow/lowbrow combo! This is one of the recipes from our Top Ten Sandwich & Salad Trends report.

To "chiffonaide" the basil simply means to cut or shred it finely, as though you were using it for a garnish.

Ingredients

  • 1/2 cup red grape tomatoes, halved
  • 1/2 cup yellow grape tomatoes, halved
  • 1/4 cup Heinz® Balsamic Vinaigrette
  • 1/4 cup fresh basil, chiffonaide
  • 1 teaspoon garlic pepper seasoning
  • 8 slices fresh mozzarella
  • 8 slices sourdough bread
  • olive oil or butter as needed

Preparation

  • 1 Combine halved tomatoes, Heinz® balsamic vinaigrette, basil and garlic pepper.
  • 2 Heat skillet to medium high.
  • 3 Spread olive oil or butter on both sides of sourdough.
  • 4 Layer 2 slices mozzarella and top with marinated tomatoes onto bread and close.
  • 5 Grill both sides until golden.
