
Summer is here and that means fresh fish on the barbecue grill! Grilling the mackerel on an outdoor grill brings out the smoky and rich flavor, and because mackerel is an oily fish you need little else than salt and lemon juice for seasoning! Included is a recipe for 7-grain tabbouleh, an optional side dish to this perfectly grilled fish.

Ingredients
- 2 x fresh mackerel, gutted
- Sea salt
- Juice of 1 lemon
- For The 7-grain Tabbouleh:
- 6 tbsp 7-grain mix, cooked and cooled
- 1/3 large cucumber, diced
- 1 beef tomato, seeded and diced
- 1 small bunch parsley, finely chopped
- 2 tbsp olive oil
- Sea salt
- Juice of 1 lemon
Preparation
- 1 You want the BBQ to be burning hot and bright, with the grill fairly close to the coals. If you are only cooking fish, then it does not need to burn for that long. So, you could use lump wood charcoal.
- 2 Slash the mackerel on both sides (as shown in the video) and season with the salt and the lemon.
- 3 Lightly oil the grid of the fish holder and enclose the fish.
- 4 Grill the fish for about 10 minutes on each side, until the flesh comes away cleanly from the bone. Timing on the BBQ is very much an individual affair.
- 5 To make the 7-grain tabbouleh, mix all of the ingredients together.
- 6 Serve the hot fish with the grain salad, perhaps some grilled corn cobs and warm pita.
