Maple Apple Coffee Cake

This season we are seeing maple syrup as one of the best add-ins for your autumnal recipes!

Enjoy this moist coffee cake with a hint of cinnamon, apple, and a whole lot of maple! All the fall flavors together in one cake.

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1 stick unsalted butter, softened
  • 3/4 cup packed light brown sugar
  • 1/2 cup The Maple Guild Grade A maple syrup (boiled and reduced to a 1/4 cup)
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 1/2 cups unsweetened applesauce
  • 1/4 cup The Maple Guild Grade A Maple Syrup, for coating

Preparation

  • 1 Preheat oven to 350ºF and grease a 9-inch cake pan
  • 2 Whisk together the dry ingredients (flour, baking powder and soda, salt, and spices)
  • 3 Beat butter, sugar, maple syrup, and vanilla in a mixer at high speed until pale and fluffy (2-3 minutes)
  • 4 Add eggs, one at a time, beating well after each addition and scraping down the sides
  • 5 Add in the applesauce and beat well to incorporate
  • 6 At low speed, add in the dry ingredients until just combined
  • 7 Pour the batter into the pan and bake until golden-brown (35-40 minutes)
  • 8 Remove from oven and place on a cooling rack. Immediately brush a layer of maple syrup on top of the cake to soak in as it cools
