Cut the rind off the top of the cheese, discarding. Place cheese in a two 16-ounce (2 cups) round, ceramic baking dishes or ramekins; set aside

Peel core and dice apple; set aside. In a large skillet, cook bacon until as crisp as desired over medium heat

Drain fat and add coleslaw mix, diced apple, and cranberries

Place back on medium heat, cover and cook 5 minutes, stirring frequently

Remove lid, increase heat to medium-high and add maple syrup, cider, and pepper

Mix well and continue cooking until the liquid has almost completely evaporated about 2 minutes

Preheat oven to 350 F. Removes apple mixture from heat and pile onto prepared Brie-filled dishes
