Roasted New England-Style Brie

This awesome recipe gives you a slight crunch, natural sweetness, and tang—topped off with a bit of salty, smoky bacon flavor. Great as a dip or grab a spoon and dig in!

Ingredients

  • 2 (6-8 ounce) rounds Brie cheese
  • 1 Granny Smith apple
  • 1 strip bacon, diced
  • 2 cups coleslaw mix
  • 3 tablespoons dired cranberries or cherries
  • 1/2 cup maple syrup
  • 1 cup apple cider or juice
  • 1/2 teaspoon black pepper

Preparation

  • 1 Cut the rind off the top of the cheese, discarding. Place cheese in a two 16­-ounce (2­ cups) round, ceramic baking dishes or ramekins; set aside
  • 2 Peel core and dice apple; set aside. In a large skillet, cook bacon until as crisp as desired over medium heat
  • 3 Drain fat and add coleslaw mix, diced apple, and cranberries
  • 4 Place back on medium heat, cover and cook 5 minutes, stirring frequently
  • 5 Remove lid, increase heat to medium-high and add maple syrup, cider, and pepper
  • 6 Mix well and continue cooking until the liquid has almost completely evaporated about 2 minutes
  • 7 Preheat oven to 350­ F. Removes apple mixture from heat and pile onto prepared Brie­-filled dishes
  • 8 Place ramekins in a large sheet pan and roast 20-­30 minutes, or until a toothpick easily pierces the cheese in the middle when inserted, showing you it has completely melted
  • 9 Remove from oven and serve immediately
