You’ve probably all had some version of a no bake cookie before. Some use powdered milk, or corn syrup. Some have more peanut butter, or use crunchy peanut butter–there are many variations. We’ve tried a few and decided this one is easy and adapts well to a different kind of ingredient–steel cut oats. They give the cookies a nutty texture and taste, without actual nuts, but still with the healthy effects of oatmeal. It fits our holiday baking mood: easy and full of flavor.
