90 Second Mediterranean Stuffed Zucchini

Whether you’re a vegetarian or just looking for a colorful side dish, try these Mediterranean Stuffed Zucchini, they’ll really float your boat!  I’m Chef Cari with The Food Channel, let’s go make some!

Have I tempted you yet? Let’s get started. First carve out the insides of halved zucchini to make a boat.

Reserve the insides and set aside.

Brush zucchini boats with olive oil and place face down on a baking sheet.

Roast at 475 degrees for about 15 minutes.

Chop up reserve “insides” and set aside.

In the meantime, sauté some red onion, salt, pepper and some fresh garlic until translucent.

Add in some yellow squash and reserved zucchini.

Continue to cook until the liquid evaporates.

Let cool, then add in remaining ingredients, tomatoes,  fresh herbs and crumbled feta cheese.

So now you’re ready to fill your boats.

Return them to the oven for about another 10-15 minutes.  Yum!

And to top it all off the whole package is edible!!
