How to Make Sweet and Sour Caponata from Sicily

On this episode of You, Me & Sicily! Eszter and her friend Vanessa make the popular sweet and sour caponata using all local, fresh ingredients!

This popular dish, of Spanish origin, has different recipes and preparation styles — often unique to a particular region or household. Think of it as a sweet and sour version of ratatouille with chopped fried aubergine and other vegetables, seasoned with olive oil, tomato sauce, celery, olives, and capers, in an agrodolce sauce. Variations may include carrots, bell peppers, potatoes, pine nuts, and raisins.
