Not only is it Cinco de Mayo weekend, but it’s also the weekend we celebrate enchiladas. They’re not just for Cinco, you know, and are a fun, easy-to-prepare favorite at my family’s gatherings all summer.
Very simply, enchiladas are corn tortillas wrapped around a protein, often with cheese. While modern versions can be highly creative, in both fillings and toppings, the practice of rolling food into a corn tortilla is believed to date back to the ancient Mayans. Yes, not only beautiful architecture and advanced civilizations, but the origins of what has become a favorite food today.
But What to Add?
Meat and cheese may be staple fillings, but those in more coastal locations often wrapped seafood in tortillas. Today, it’s a palate for your culinary creativity. You can experiment with a variety of fillings, from meats and cheeses, to vegetables, seafood and protein alternatives.
One of my personal favorites is beef, chicken or pork strips (or a combination of all), mashed potatoes, black beans, avocado and onions. The options for toppings run the gambit as well, and it’s fun to experiment with different combinations, both inside, as well as out.
