Ingredients
- 2 tablespoons ground flax
- 3 tablespoons warm water.1 1/4 cup organic all purpose flour
- 1/4 teaspoon baking soda
- 1/8 teaspoon sea salt
- 1/2 cup organic brown sugar
- 1/4 cup organic white sugar (sugar in the raw also works)
- 1 stick (1/2 Cup) of Earth Balance
- 1 teaspoon vanilla extract
- 1 cup vegan dark chocolate chips
Preparation
- 1 Mix flax with 3 T. warm water and allow to sit for two minutes.
- 2 Sift dry ingredients.
- 3 Assemble wet ingredients then whisk thoroughly with a spatula. (Do not beat).
- 4 Mix dry and wet ingredients together. (Again with a spatula, not an electric mixer)
- 5 At this point, you should have a nice stiff mousse-like dough.
- 6 Mix in your vegan chocolate chips.
- 7 Form your cookie dough with wet hands and place (with a good amount of space between them) on a greased cookie sheet.
- 8 Bake for 20-23 minutes at 300 degrees until golden brown.
