Not only are these blueberry pancakes a great way to start your morning, but they also promote healthy digestion by being completely organic and gluten-free. Top this recipe off with vegan butter and maple syrup for a bit of extra sweetness!

  • 1 1/2 cups dairy and gluten free pancake mix
  • 1 tablespoon flax seed (ground)
  • 3 tablespoons water
  • 1 cup coconut milk
  • 1 1/2 tablespoons coconut oil
  • 6 oz. organic blueberries


  • 1 Combine the water and the flax seed into a bowl and mix evenly.
  • 2 In a large mixing bowl, combine the pancake mix, coconut milk, coconut oil, and the flax seed.
  • 3 Whisk the mixture until smooth and even. It won't be perfectly smooth, but that's ok.
  • 4 Add the blueberries and mix until evenly distributed.
  • 5 Cook the pancake mixture on medium heat for about 1 1/2 minutes on each side or until golden brown.
  • 6 To plate, add vegan butter and maple syrup.
