Taco Salad recipe This is a great warm salad. Which makes it great for a summer salad that needs a little meat! Or, it works well in the winter time when eating something cold is out of the question.

Start by browning a pound of ground beef. Add taco seasoning, a little water, and one can of drained and rinsed kidney beans. Heat until warm again. Last night I used black beans and it worked great.
Then just place crushed tortilla chips in a bowl, add salad greens and any veggies you like. Spoon beef and beans over salad. Top with cheese and dressing. I personally like Catalina on mine, but taco sauce and good salsa works well too.
